When my Nespresso broke a few weeks ago because my brother dropped it on the floor during my move I fell into a bad habit of buying my iced coffee every morning on my way to the gym (this is third time a machine of mine broke… Maybe I’m cursed? The first time I was the one who dropped it and the second time I plugged it into a 220 outlet on an extended trip to Israel…yes, I took the Pixie with me!). Buying coffee is a total waste of money. Plus my options (Starbucks, Le Pain Quotidien, Gourmet Garage…) all make coffee that is totally sub-par compared to Nespresso. When I found out that they launched Intenso on Ice and Leggero on Ice, coffees designed specifically to be had iced I called up the Nespresso Club and sent in my machine for repair. A sleeve of ten capsules is $8 – the price of two store bought iced coffees.
On a typical day I’ll fill my water bottle with ice cubes and then pour one hot espresso shot over it along with water (basically an Americano), but when I’m not jetting off to the gym it’s nice to make something a little more involved. Here’s a look at some Instagram-worthy iced coffee recipes!
Iced Almond Macadamia Milk Latte (makes 1 quart)
- 1 generous cup of blanched almonds
- 1/2 cup of macadamia nuts
- 1/3 cup of pitted dates
- 1 liter of filtered water
2 shots of hot espresso
In a large, lidded plastic container, combine almonds, macadamia nuts and dates. Add water to cover and let soak overnight, at room temperature, for at least 12 hours. Process mixture in a blender, at highest speed, for 3 to 4 minutes until finely pureed. Strain the mixture through a nut bag or jelly bag or a fine mesh sieve over a bowl with two layers of cheesecloth. Strain mixture. The nut milk should be silky and creamy. To make a latte: combine 8 ounces of chilled nut milk, a double shot of espresso and ice in a glass or cocktail shaker. Shake or stir for 30 second, strain into a chilled glass with fresh ice.
